Fried half fish

Seenghala or Aar is a kind of giant catfish having a medium-firm but buttery texture with a mild fishy flavour.
For the bhuna, the chunky fish pieces are fried after a marination of salt and turmeric powder.
The next step is to temper the oil with whole spices like cinnamon, green cardamom, bay leaves and red chillies. Once the spices are fragrant, in goes onion paste along with ginger garlic paste and fried till the raw smell of the three ingredients, vanishes. Green chillies, Red chilli powder, Jeera / Cumin powder, Garam masala, salt and sugar makes its way to the fried concoction of onion-ginger-garlic paste. The final step is to add in some water and simmer the fried pieces of fish so that the pieces can absorb the beautiful flavours of the curry. We finish it off with adjusting the seasoning and by sprinkling a handful of chopped coriander leaves which we didn’t have this time.
And that’s it! It’s ready to be served with steaming hot rice.❤️
